Easy recipes for caravanners: Spicy Pancakes & Crepes

The following recipes are delicious fillings that you can use in your crepes and pancakes (recipes in last month’s Caravan World).
Next month we will feature wonderful recipes using waffles.

CREAMY SPICY CREPES

Creamy -Spicy -Crepes

Preparation time: 10 minutes

Cooking time: 15 minutes

The following quantities will serve four.

Handy Hint 1: You could use either turkey mince or pork mince instead of the chicken mince in these crepes.

Handy Hint 2: If you need to make these crepes go a little further with regard the number of diners pulled in by the delicious cooking smells, then add some steamed rice with a little chopped coriander tossed through it as a side dish.
Handy Hint 3: You could also substitute cream of chicken soup for the cream of mushroom soup in this recipe.

Ingredients:

  • 1 tbsp vegetable oil
  • 750g chicken mince
  • 3-4 green shallots, finely sliced
  • 400g tin cream of mushroom soup
  • 1 cup milk
  • 1 small red or green chili, deseeded and finely chopped
  • 1 cup grated cheese of your choice
  • 3-4 tbsp chopped coriander
  • 1-2 crepes per diner
  • Grated cheese and chopped coriander, for garnishing

Method:

Prepare the crepes as per the recipe in featured last month’s Caravan World. 

Heat the vegetable oil over a medium heat in a heavy based frypan. When the oil is hot, add the chicken mince to the pan and stir well to break up any lumps of mince. After about three or so minutes, when the chicken mince is no longer pink, add the finely sliced green shallots. Stir fry the chicken mince and shallots for another minute.

Add the cream of mushroom soup, milk and finely chopped chillies to the pan with the chicken mixture. Bring to a simmer and cook for a couple of minutes. Stir the grated cheese and chopped coriander into the chicken/soup mixture. Allow to cook for a further minute or two or until the cheese has melted. Remove the pan from the heat.

To assemble, lay a prepared crepe on a serving plate and spoon a generous amount of chicken mixture down the centre of the crepe. Roll the edges up around the filling. If the edges of the crepes aren’t sticking together, use a little of the filling as a glue to keep the edges together. Repeat this process with the remaining chicken mixture and the crepes.

To serve, place one or two crepes on each diner’s plate and sprinkle with a little grated cheese and coriander.

BLACK PEPPER STRAWBERRIES WITH PANCAKES

Black -Pepper -Strawberries -with -Pancakes

Preparation time: 10 minutes

Cooking time: 15 minutes.

The following quantities will serve four.

Handy Hint 1: You could use raspberries or mulberries instead of strawberries in this recipe.

Handy Hint 2: Serve the Black Pepper Strawberries with pancakes with some natural yoghurt to which you have added either a drop or two of vanilla extract, a tablespoon of honey or a tablespoon of maple syrup.

Ingredients:

  • 1-2 tsp crushed black peppercorns
  • 1 punnet strawberries, hulled
  • 1/4 cup white sugar
  • 1 tbsp balsamic vinegar
  • A splash of sweet white wine (optional)
  • Prepared pancakes

Method:

Cut half of the strawberries in half lengthwise. Place the crushed black peppercorns, halved strawberries and whole strawberries in either a plastic or glass bowl.

In a small saucepan, combine the sugar and a 1/4 cup of water. Bring to a simmer, checking frequently to ensure that the sugar isn’t burning. Swirl the pan from time to time and continue to cook until the sugar has turned golden brown. Remove the pan from the heat and pour the sugar mixture over the top of the peppered strawberries. This process may splatter a little. Stir gently to combine and then add the balsamic vinegar and white wine.

To serve, lay a pancake on each plate and spoon some of the strawberry mixture onto the pancake, top with another pancake and spoon a little strawberry mixture on the top of the second pancake. So you should have pancake, strawberry, pancake, strawberry. Add a dollop of enhanced natural yoghurt on the side (see Handy Hint 2) or a scoop of vanilla ice cream.
